The Winemaker Uncorked Ruby Cabernet is a medium bodied table wine. Gently aged in oak, the wine has hints of chocolate and coffee.
Ruby Cabernet is better known as a blending variety, however, it has a lot of potential as a stand alone wine. The Ruby Cabernet grapes were machine harvested when the baume (potential alcohol) reached 14.2% and the berries were plump and full of flavour. Following traditional wine making techniques, the grapes spent a week in an open vat fermenting before being pressed. French Oak chips were added to the wine for 8 months. This wine is ready to drink now and a perfect compliment to a roast dinner or pasta dish.

The Winemaker Uncorked Shiraz is packed with flavour, created with carefully selected fruit from the NSW Riverina region. Gently aged in oak, the wine has hints of chocolate, coffee and blackberries.
These grapes were harvested on a hot morning in February 2015. The baume (potential alcohol) was 15.8% when harvested and the fruit displayed a great depth in colour. Following traditional wine making techniques, the grapes spent a week in an open vat fermenting, with daily pumpings to aerate the wine and add oxygen to the juice. The juice was pressed to a tank where it has remained for 10 months, gently aged with French Oak.
